I'm glad you enjoy what you do, it shows :) The end result is really pleasing to look at. The topping (ding) looked like a weird pretzel to me, so I was more in favor of your later suggestion to use biscotti or some other cookie. I LOVE COFFEE and will always migrate to any form of coffee dessert. Tiramisu is one of my favorites.
