I've gotten pretty handy smoothing it out, though there is always the fear of setting fast. I use a large offset for the initial spread, then a smaller one to work out any uneven areas... quickly. :) And I'm glad that you like this idea -- I've felt like a slacker for not showing pictures of food that I make recently b/c I don't have time to make too much at home anymore... but then I thought, um, I make tons of food every weekend!
