I have been to my share (my mother has been a wedding/party caterer for over 20 years) and it is pretty much hit or miss, mostly DJs and photographers and people wanting to snack on caterers free treats. The ones at hotels seem to be the smallest, try a larger venue if you are really interested in fairs. Good luck! Wedding fairs are sort of a bust. Vendors aren't supposed to advertise on the boards, but I could post a recommendation for your favors once you have things going.
