Oh... each bar has its unique laundry list of considerations! Some issues become apparent in the development phase, and then others when I start doing larger quantities. And sometimes changing one thing means changing another thing... I've gotten pretty good at identifying and solving whenever I can.... but you never know what can happen! With these, it's really about the nougat -- I have to press it flat and into a certain size by (gloved) hand, with the help of a little plastic scraper.... and try to get to get to the same height every time, and throughout the whole slab.

Anyway, I'm glad that it's worth it!!! :)

Wow! Who would anticipate all those considerations beyond the candy itself? Did you or did all this come as tough surprises?

In any case, thanks for fighting the good fight because they sure are complex, surprising and delicious!
