Sarah - Huh… I never thought about pairing white chocolate & caramel. I agree about the more delicate flavor, and it also melts so smoothly that I think that the texture would be perfect to match, too. I’m really tempted to try out the cinnamon and nutmeg caramel in white chocolate — it may be a really great holiday flavor. If I develop it, I’ll send you some! Thanks!

One of my favourite flavour combinations is caramel coated in white chocolate. I know it’s not technically ‘Real’ chocolate but good quality white has a more delicate flavour than milk or dark chocolate and that really lets the flavour of the caramel shine through (I freakin’ love caramel btw).
This might seem too outlandish for the average consumer, but I like the idea of a cinnamon+nutmeg flavoured caramel enrobed in white chocolate.

Yeah, now that I think about it, chocolate, caramel, salt, and nuts is a mighty attractive combination. And I’ll keep you posted on taste testers….

One thing I have learned, is people like their nuts! I am not surprised at your results at all, but am very excited that you’re up for the challenge for us.

Can’t wait to see the packaging and of course taste the final product.
