		<description>The Thermapen definitely has accuracy, speed, and ease of reading the display on its side, but it's not totally perfect.  It's meant to be held in the right hand to read it... I'm right-handed, so when I make caramel, now I have to either stir with my left hand or hold it in my left hand awkwardly bend my arm.  It also automatically shuts off after a few minutes to save the battery, so I start using it when the caramel looks like it might be close to being done.... Even then, it once shut off at 246...  To turn it back on, you have to close it and open it again, which is a little unwieldy when it's been dipped in the hot caramel and I usually wear an oven mitt when I caramelize....

You really have to hover with it.  And for my nougat, I start hand-whipping the egg whites at a certain temp of the sugar until the sugar reaches its final temp, which means that I have too few hands to use the thermapen easily for it.  So, I used my analog as a guide while I whipped and did the final reading with the thermapen.

If I could clip it on the pot and have it read continually, it'd be perfect!</description>
