If you want to go for the smoky, anything by Talisker (not just the DE), Ardbeg or Lagavulin (and there is also a Lagavulin Distiller's Edition) would be good. Laphroaig is more affordable but has a more medicinal quality that might not meld as well with chocolate.

There is a new trend toward super-peated (i.e. smoky) Scotches, but they are quite expensive and can be hard to find. If you're interested, you could check out PC7 or Octomore by Bruichladdich or Supernova by Ardbeg; they would certainly stand out.

Another angle would be to try a heavily sherried Scotch. Pick up a bottle of the cask strength Macallan. I bet that would add a new, if different dimension to your Scotch Bars.

Whatever you do, you know I'll be excited to try it.

Ha, yeah, it's weird -- it's kind of like when I have a lot orders, I don't want them, but when I don't have a lot orders, I really want them!

I was actually thinking about emailing you one of these days to ask about Scotch -- I'm not nearly at the level that you are in regards to them. I was told that the 1996 Distiller's Edition is the same as the 1992, so there's that... or maybe another kind of Talisker.... or maybe another kind of Scotch altogether. I've considered changing to a more widely available one that won't run out as easily, but then I started thinking that my company is a bit about seasonality and unique flavors... so maybe rotating the Scotch Bar with limited edition Scotches might be interesting to try after all. Do you have any suggestions for Scotches on line with the Distiller's Edition? It has to be strong to get through all the flavors in the bar.

Great post! It's great to get some insight into the day of a candymaker. Being that busy is indeed a blessing and a curse, and may leave you cursing.

So what will you do when they run out of Talisker Distiller's Edition?
